🌿 Seasonal Fruits & Vegetables Mattea Hodnik (U Poghju Farm in Cauro) . Certified organic, Mattea prioritizes ethical production to offer you products of absolute freshness.
🥩 Meats from Jacques Colonna (Butcher in Cognocoli-Monticchi). Veal, pork and lamb selected for their Corsican origin, essential to the authentic taste of Fabien's stews and grilled meats.
🥓 Corsican charcuterie by Michel Oppo ( artisan in Grosseto Prugna) . His pigs are raised free-range under oak trees. Michel controls everything, from raising them to the traditional curing process , for rich, complex flavors.
🧀 Sheep's cheese (U Pasturella) by Carla Casanova (Shepherdess in Torgia) . She carries on the family legacy with a successful blend of pastoral tradition and modernity. A Brocciu and cheeses full of character.
🐐 Goat Cheese (U Puntonu) Barthélémy Poggi (Producer in Quasquara). At 30 years old, this passionate young man single-handedly manages his entire production chain to create an artisanal goat cheese of rare quality.
🌰 Nadia Andreucci PDO Chestnut Flour (Producer in Zévaco). Dried over a wood fire using ancestral know-how, her "affurnata" flour with biscuit notes enhances our crepes and our Nicci.
🍯 Corsican AOP honey (Sicretu d'Apa) Pascal Bizon (Beekeeper in Cuttoli-Corticchiato). Pascal practices ancestral transhumance, respecting the rhythm of the bees for honey of recognized excellence.
🍓 Jams from Domaine CAPPA (Producer in Albitreccia) . Carefully grown fruits to create unique jams that enhance the notion of Corsican terroir from breakfast onwards.
☕ Café de Caractère Brûlerie des Cafés Corsica (Roaster in Afa) . A selection of high-quality beans and traditional roasting to guarantee rich aromas with every tasting.
🍷 Wines from Domaine de Pratavone AOP Ajaccio ( Winemaker Isabelle Courrèges in Cognocoli) . Isabelle cultivates this iconic family estate with passion. Her wines bring the finesse and freshness of the granite terroir to our table.
🍷 Wines from Domaine Fiumicicoli ORGANIC ( Andreani Family Winemaker in Sartène) . Pioneers of organic farming in the Ortolo Valley, they perpetuate a demanding family know-how to offer wines of great elegance, reflecting a respected land.
🍷 Wines from Domaine Castellu di Baricci ORGANIC (Winemaker Elisabeth Quilichini in Sartène) . On her organically cultivated Ortolo lands, Elisabeth works her vines in harmony with nature to produce a powerful and authentic red wine.
